The Scratch Baker on Tamina Road

Some businesses start with a loan and a plan. This one started with family dinners. Courtney Nguyen grew up in a house where the table was the meeting place, and she says so plainly: "Food has always been big in my family gatherings and it's just how we connected." She carried a science education and a healthcare career for years before the kitchen won out.

The Flour Petal began as a home bakery more than six years ago. Nguyen learned cake decorating the way a lot of self-taught masters do now, watching videos and ruining batches until the batches stopped being ruined. She got good enough that other people wanted to learn from her, and she spent years teaching decorating classes in Houston, Dallas, Austin and San Antonio. In spring of last year she opened the storefront at 32907 Tamina Road, Suite C, and the home bakery became a bakery bakery.

The case is broad for a shop its size. Croissants, cupcakes, cheesecakes, cookies, macarons, and a homemade take on the pop-tart, with gluten-free options in the rotation. Custom cakes are the centerpiece of the business. The drink board leans on her family's roots, with Vietnamese-style iced coffee lattes, and a short lunch menu of wraps, turkey clubs and chicken salad sandwiches means you don't have to eat dessert first. She still teaches, now in her own space, and hosts afternoon tea events.

Regulars at the Saturday market already know the address. The Tamina Road complex is the same one where the outdoor market sets up every Saturday morning, which makes a market run and a croissant a single errand.

"One of the things that has always been close to my heart is building community," Nguyen told Community Impact this month. A bakery is a decent instrument for that. Birthdays, graduations, gender reveals, the Tuesday when somebody just needed a macaron: it all comes through the same glass case.
